5 Habanero Peppers
7 Dangjo peppers
20 Small Red Chiles
20 Small Green Chiles
4 Cherry Red Peppers
1/8 cup Sesame Oil
1/4 cup tamarind puree
3 tbsp tomato paste
1/2 cup brown sugar
1/4 cup honey
1/8-1/4 cup picked ginger slices (1/4 was pretty strong)
1 tbsp garlic
1 tbsp salt
1 tbsp black pepper
1/4 cup ponzu sauce (could use 1/2 cup perhaps)

Sautee all peppers in sesame oil. It all goes in the blender.


Version 1.0 - 1/8 cup ginger slices is probably better, 1/4 is a bit pungent, but it's not bad. Perhaps 1/2 cup of ponzu sauce, since the soy flavor is welcome but not pronounced enough.
